the World Watch Institute estimates that agricultural products travel an average of 1500 miles from the field where they are grown to the dinner table where they are eaten. the fuel required to transport food is becoming more and more expensive and less and less environmentally sustainable. add to this the energy required for the farm machinery and the production of chemical imputs to maintain the soil and deter pests. all edibles reintroduces food production into the community it serves, reducing the emission of CO2 and maintaining the availability of our food source.
